I was so excited to learn that cottage cheese is a trendy protein. When I was little, my mom would make a cottage cheese, jello, and cool whip dessert. The dessert would change with the seasons but my favorite was always the Christmas version. It had cranberry jello, low fat cottage cheese, cool whip, chopped cranberries, and walnuts.

Since weight-loss surgery, I have become a huge hummus fan. I found this hummus recipe on Pinterest and the original recipe is from Mallory the Dietitian. This hummus has extra protein to help meet my protein macros.

Ingredients:

  • 1 can organic chickpeas (about 1 3/4 cup)
  • 1 cup low-fat cottage cheese
  • 1/4 cup organic tahini
  • 3 tablespoons lemon juice
  • 3 tablespoons of liquid from the chickpeas (can use water)
  • 1 clove garlic
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt (more if needed)
  • 1 teaspoon everything bagel seasoning (more if needed)

Drain and rinse chickpeas, saving 3 tablespoons of liquid. Add all ingredients to food processor. Blend until smooth (about 2-3 minutes). Optional: You can add more everything bagel seasoning and extra virgin olive oil to top before serving.

This recipe makes approximately 5 servings. Macros for 1 serving: 196 calories, 17.3 g carbs, 8.3 g fat, 11 g protein. Enjoy this hummus with vegetables or even a gluten free pita chip/bread choice.
