Satisfy your sweet cravings with these bite-sized bursts of blueberry bliss and creamy goodness. Perfect for a quick snack or a guilt-free treat!

Ingredients:

  • 1/2 cup gluten-free rolled oats
  • 1 cup dried blueberries
  • 2 tbsp honey
  • 1/4 cup cream cheese
  • 1/4 cup almond butter
  • 1/2 tsp vanilla extract
  • 1/4 cup shredded coconut (optional, for coating)

Instructions:

  • In a food processor, combine the rolled oats and dried blueberries. Pulse until the mixture is finely chopped.
  • Add the cream cheese, almond butter, honey, and vanilla extract to the food processor. Blend until the mixture comes together into a sticky dough.
  • Scoop out small portions of the dough and roll them into bite-sized balls using your hands.
  • If desired, roll the balls in shredded coconut for an extra layer of flavor and texture.
  • Place the energy balls on a baking sheet lined with parchment paper. Refrigerate them for at least 30 minutes to firm up.
  • Once chilled, transfer the energy balls to an airtight container and store in the refrigerator for up to a week. Enjoy whenever you need a quick energy boost!
